Let’s go Retro.

There seems to something of a resurgence of some of the ‘old cuts’ (brisket, shoulders, shin, etc). But how do you cook the cheaper, less popular cuts of meat to produce a fabulous ‘traditional’Autumn meal? Let’s go for steak and kidney pud, steak and ale pie, slow roast brisket, puds with Autumn fruits but maybe with a twist. How do you use quince? How much do you sprinkle the cinnamon? Let’s get all Nigel Slater! Bring your recipes, tips, dos and don’ts to avoid chewy disasters and instead produce heart-warming, homely meals.

Tasting: One each of the above! A really traditional savoury dish and a dessert.
