Pedro Ximenez is the classic grape of the Montilla in southern Spain.

It produces one of the world’s greatest and most distinctive sweet desert wines, after ageing for five years in oak barrels.  This is a mahogany coloured, rich, deep wine, with notes of raisins, figs, sultanas, apricots and caramelised orange followed by flavours of wood spice and fruit cake.
